Reduce your utility and maintenance costs by improving your water quality!

Regular preventative maintenance is necessary to keep your facility running efficiently and performing to its maximum capability. However, you may have also experienced some unnecessary visits, visits that could have been avoided by controlling one of the most common commodity items: water. Water not only has an effect on utility bills, but it can also be the source of unnecessary maintenance. How often is a service company performing ice machine cleanings? Or descaling a piece of espresso or steam equipment? Controlling your water quality can help to optimize the number of service calls. Equipment that heats or chills water can be the largest source of service calls, and this is often due to varying water quality. Ice machines, especially those that are high-volume, are particularly prone to scale buildup and other water related problems. Steam and combi ovens are also very prone to equipment failure and maintenance from water quality issues. While there have been great advancements in cooking technology over recent years, some of these technologies, like boiler-less combi ovens, make good water quality even more vital. Ovens that use steam are especially susceptible, as any contaminant in water is left behind when the oven turns water to steam. While a service company is vital to maintaining operation, you may also want to ask about how controlling influent water quality may help reduce the number of reactive service calls in your operation. You may even be able to reduce the number of preventative maintenance checks on their current schedule. Controlling influent water quality can be as simple as installing a water treatment solution. There are a number of ways to control water quality, including traditional filtration, softening and reverse osmosis.

• Filtration – Although traditional filtration will not remove hardness and TDS by itself, many filtration companies add phosphate to prevent the precipitation of scale on heating and cooling elements.

• Softening – Softening handles hardness by replacing the calcium in water with sodium. By replacing calcium with sodium, scale, a combination of sodium and carbonate, is prevented from forming

• Reverse Osmosis (RO) – RO removes hardness from water using membrane technology. Dissolved minerals are removed from the water and sent to drain, leaving nearly pure H20.

Espresso Water Trick or Treat?

Ever had a bad espresso experience? Espresso is 85-96% water and that water is extremely important to delivering not only a great shot of espresso but not damaging a very expensive espresso machine. If the operator gets the water wrong this season you may find a ghostly taste in your coffee beverage. Chlorine can alter the aroma and increases acidity. It also bonds with organics creating an earthy or moldy overtone to the flavor. TDS, (total dissolved solids), can cause poor extraction of the grounds, under extraction leads to weak and sour drinks and over extraction leads to bitterness so taking care to treat coffee and espresso beverage water is extremely important.  From Starbucks to Dunkin the 2015 seasonal holiday specialty beverage season ramps up this week with Halloween and with it some of the most popular coffee beverages ever inspired by a season. Who hasn’t had a Pumpkin Spiced Latte?  This year’s current seasonal line up for Starbucks now includes the Toasted Graham Latte, the Salted Caramel Mocha and the Iced Vanilla Spiced Latte. Dunkin Doughnuts has their own Pumpkin Latte and Peet’s their Mayan Mocha! These hot seasonal espresso beverages have proven to increase sales and have succeeded for all of these chains and a lot of independent operators too by drawing in customers early and often during the holiday season. People don’t want to miss out on limited time seasonal offers and for a lot of us these drinks are now part of our memories of enjoying and celebrating the holiday season. The size of the MRS unit is determined according to the amount of beverage water that will be needed at peak operating time within the facility. For example the MRS600HEII will make 600 gallons of water every 24 hours or 25 gph, (gallons per hour). The MRS350Bl will make 350 gallons every 24 hours or 14.58 gph, (gallons per hour). 16th Annual World Barista Championship to feature Everpure filtration

The World Barista Championship is the premier event for international competition in the coffee community.  This competition serves as the championship from both local and regional qualifying events from World Coffee Events. Contestants prepare samples of Espressos, Cappuccinos, and original drinks in a 15-minute period. Judges will evaluate participant creations on not just taste but creativity, presentation, and skill. Each contestant’s creation will be different in almost every single way, except one key factor. The key ingredient that is the foundation for every great cup of coffee is the water. Claris: The Solution to your Steamer Problems

Protecting a commercial steamer from limescale and other damaging entities caused by the water has become easier with the introduction of the Claris system.  The Claris system utilizes five stage softening and filtering to allow the user to dial in the perfect amount of mineral for their steamer.  Boilerless and combi steamer ovens have to retain enough mineral content for probes to accurately detect the water levels.  While necessary to keep minerals, too much content will cause scaling on heating rods and the hot plates.  So having the ability to choose the amount of wanted mineral in your water is a great feature. Perfect Crema!

Great Espresso starts with great water. The first thing an operator should do is test their water to find out the hardness. Water hardness is measured in grains per gallon, a grain is (64.8 milligrams) of calcium carbonate dissolved in 1 US gallon of water (3.785412 L). Espresso is 85-96% water and that water is extremely important to drawing out the flavor of those expensive coffee beans.

But what determines the taste of a great tasting espresso? Crema! Crema is the flavorful, aromatic, reddish-brown froth made when air bubbles combine with fine-ground coffee’s soluble oils. The strong presence of crema in an espresso shot indicates a quality, well-ground coffee and a skilled barista (professional coffee maker). Crema, compared to drip coffee, helps give espresso a fuller flavor and longer aftertaste. The key to creating that perfect crema is tailoring the hardness of the water and Pentair/Everpure working directly with Specialty Coffee Operators and Espresso Equipment Manufactures developed working solutions to take care of espresso water regardless of the number of grains of hardness at an operators location.

A Word from Our Industrial Sector

My name is Vince Paglino and I am the Industrial Filtration  specialist at Filter Pure Systems.  We specialize in Chemical Feed Pumps, Chlorinators & Air Injection, Commercial Softening & ION Exchange, Commercial Reverse Osmosis, Industrial Water Remediation, UV Sterilization and Industrial filtration systems. I wanted to share with you a recent industrial experience. We were approached by a large ice manufacturer to help them find a resolution for their scale problem. The limescale accumulation  was so bad that it had clogged the compressors and starved the equipment of water that it needed to produce the 360,000 pounds of ice it manufactured daily. We visited the location and immediately took water samples and investigated the type of equipment they were using and noticed the large amount of limescale remnants and corrosion it was causing to their equipment. They were using 2 large cartridge housings to filter the water down to 5 microns. After a few weeks of limescale buildup all of the ice manufacturing equipment was shut down and at a standstill without any ice production. Once the water tests were completed, the results noted that the Ph level was very high at 9.3 & 9.4 (the range should be between 7.0 – 7.5) and both the bicarbonate and carbonate alkalinity levels were elevated as well. The results indicated that the solution required softening the water and reducing the Ph levels at the same time to eliminate the problems of limescale accumulation. We customized a solution to handle the 40,000+ gallons of water that they use daily. A large duplex softening unit that continuously treats the water even while servicing one tank at a time when it cycles to backwash. A chemical pulse feeder that will introduce Muriatic Acid after the softener to reduce the Ph levels in the water. The solution is also modular so equipment can be added at a later date to handle any ice production growth and added manufacturing equipment. The delivery of this equipment was not only timely but it was delivered several days early to the customers delight. The manufacturer’s representative scheduled a time for installation training for the company representatives to ensure normal and ongoing operational use and maintenance of the equipment.
