Espresso Water Trick or Treat?

Ever had a bad espresso experience? Espresso is 85-96% water and that water is extremely important to delivering not only a great shot of espresso but not damaging a very expensive espresso machine. If the operator gets the water wrong this season you may find a ghostly taste in your coffee beverage. Chlorine can alter the aroma and increases acidity. It also bonds with organics creating an earthy or moldy overtone to the flavor. TDS, (total dissolved solids), can cause poor extraction of the grounds, under extraction leads to weak and sour drinks and over extraction leads to bitterness so taking care to treat coffee and espresso beverage water is extremely important.  From Starbucks to Dunkin the 2015 seasonal holiday specialty beverage season ramps up this week with Halloween and with it some of the most popular coffee beverages ever inspired by a season. Who hasn’t had a Pumpkin Spiced Latte?  This year’s current seasonal line up for Starbucks now includes the Toasted Graham Latte, the Salted Caramel Mocha and the Iced Vanilla Spiced Latte. Dunkin Doughnuts has their own Pumpkin Latte and Peet’s their Mayan Mocha! These hot seasonal espresso beverages have proven to increase sales and have succeeded for all of these chains and a lot of independent operators too by drawing in customers early and often during the holiday season. People don’t want to miss out on limited time seasonal offers and for a lot of us these drinks are now part of our memories of enjoying and celebrating the holiday season. Regardless of which one is your favorite, operators know and work diligently to make sure that all of these beverages begin with a great shot of espresso.  Everpure continues to lead the Industry in taking care of the ghosts in the water, by working directly with Specialty Coffee Operators and Espresso Equipment Manufactures. For espresso, that means a softer water that also protects the equipment from both hard water scale and chloride, For example the, La Marzocco GB/5 Commercial Espresso Machine manual notes; For an operator the place to begin is with a POE, point of entry standard Everpure water test, DEV7013-73. This test includes the water bottle and lab analysis of 30 contaminants and characteristics. The test usually takes from 7 to 10 days to analyze at the laboratory located in Chicago and the following is a sample of the delivered analysis; https://dev-filterpure.pantheonsite.io/blog/wp-content/uploads/2014/08/Untitled3.jpgThis water would be way out of specification for the Marzocco with hardness of 257 ppm and chlorides of over 308.8ppm the recommendation would be an Everpure MRS Blended reverse osmosis system to actually take the mineral and chloride out of the water and deliver water with the correct specification of both hardness between 90ppm and 150ppm and chlorides of less than 50ppm. The size of the MRS unit is determined according to the amount of beverage water that will be needed at peak operating time within the facility. For example the MRS600HEII will make 600 gallons of water every 24 hours or 25 gph, (gallons per hour). The MRS350Bl will make 350 gallons every 24 hours or 14.58 gph, (gallons per hour). 16th Annual World Barista Championship to feature Everpure filtration

The World Barista Championship is the premier event for international competition in the coffee community.  This competition serves as the championship from both local and regional qualifying events from World Coffee Events. Contestants prepare samples of Espressos, Cappuccinos, and original drinks in a 15-minute period. Judges will evaluate participant creations on not just taste but creativity, presentation, and skill. Each contestant’s creation will be different in almost every single way, except one key factor. The key ingredient that is the foundation for every great cup of coffee is the water. This year the entire event features water filtered by Pentair/Everpure. WBC Using the Everpure MRS 600 HE-II Water Filtration System for the entire event, the water not only tastes great, but also allows the contestants to craft beverages that meet their exacting standards. Perfect Crema!

Great Espresso starts with great water. The first thing an operator should do is test their water to find out the hardness. Water hardness is measured in grains per gallon, a grain is (64.8 milligrams) of calcium carbonate dissolved in 1 US gallon of water (3.785412 L). Espresso is 85-96% water and that water is extremely important to drawing out the flavor of those expensive coffee beans.

But what determines the taste of a great tasting espresso? Crema! Crema is the flavorful, aromatic, reddish-brown froth made when air bubbles combine with fine-ground coffee’s soluble oils. The strong presence of crema in an espresso shot indicates a quality, well-ground coffee and a skilled barista (professional coffee maker). Crema, compared to drip coffee, helps give espresso a fuller flavor and longer aftertaste. The key to creating that perfect crema is tailoring the hardness of the water and Pentair/Everpure working directly with Specialty Coffee Operators and Espresso Equipment Manufactures developed working solutions to take care of espresso water regardless of the number of grains of hardness at an operators location.

The Best Espresso in Town!

Every single morning before arriving to work, Amy stops by her local Starbucks and orders her usual venti latte. They know her there by name and are happy to send her on her way with her triple espresso shot drink. Amy said that her morning espresso kick starts her day and without it, well, you would probably find her half asleep at her desk, struggling to focus on her work.

Espresso can be a vital part of someone’s day, like Amy. Did you know that over 55% of the US drink espresso? That percentage is equivalent to 150 million people! That’s A LOT of espresso! 

Did you also know that Espresso is 90% water! It is a key essential ingredient in espresso preparation. So having a water filtration system becomes a must, especially in areas with hard water.
